Made for a teenage Bieber lover's birthday. Chocolate sponge with white chocolate buttercream filling covered and decorated with marshmallow fondant (yummo) and an edible Bieberlicious picture.....baby baby baby ooohhhhh......

The Tammy

This cake is for my friend at work who approached me a couple of weeks ago with a big smile and simply said "It's my birthday on the 14th and I'll be at work." I had this strange feeling that she wanted a cake.....LOL that's for sure - so I named this cake after her.

The  inspiration for this cake is her wedding. She had originally talked about one of the tiers for her wedding cake to be covered in chocolate shards but I think they ended up choosing a fondant covered cake so I  thought it would be noice to go with the original theme for her birthday cake.

Red velvet sponge with smooth cream cheese filling. Covered in whipped fresh cream with a hint of white chocolate and of course, decorated with shaved white chocolate and white chocolate shards.

Choc Vanilla

 Vanilla sponge filled with homemade chocolate mousse. Covered in creamy chocolate ganache and decorated with piped ganache, chocolate curls and chocolate dipped strawberry halves. Happy birthday Blake!

Princess T's 18th Birthday Cake


This cake is for a friend's daughter who is turning 18. The main cake and the cupcakes are made out of chocolate sponge cake with chocolate ganache filling, covered in marshmallow fondant. The leopard spots are handpainted and the main cake is finished off with fresh roses and a cake topper.

Rugby Field Birthday Cake - my first themed cake


I loved putting this together - it was my first themed cake so I stuck with the basics. Didn't really feel like fudging it up by experimenting too much seeing as it wasn't for me.



I stuck to the original plan and kept the 
blackforest flavour for the cake - chocolate sponge cake with cream and kirsch soaked morello cherries.
The grass was made out of green crumble and the goal posts were made out marshmallow fondant, I had made another set initially, but the sports expert of the house gave an honest (and appreciated) opinion that they were too wonky to be goal posts - they were binned and I used rulers and smoothers for the next set. The field lines and the piped shells were made out of cream cheese frosting.

Strawberries and Cream





After making a couple of really sweet desserts, I wanted to go back to basics and make something simple ....pity the strawberries weren't as sweet as I would've liked them to be....oh well, nevermind ..





Vanilla sponge filled with fresh strawberry puree and calorie free (I wish) whipped cream folded with white chocolate. Covered with more cream and decorated with fresh strawberries. The strawberries were soaked in sugar syrup to try and hide the sourness.

'Marls' Bar Cheesecake

I prefer baked cheesecakes but Matt has been begging for a cold set cheesecake and requested a Mars Bar cheesecake - here's my version.






Set in a chocolate crust, I used two different types of cream cheese and freshly made butterscotch sauce. It's covered with a layer of creamy chocolate ganache and decorated with sliced mars bars. 


very rich in flavour - the creamy cheese goes well with the ganache. I only used a thin layer of butterscotch in the cream cheese because I was worried it would turn out to be too sweet and sickly with all the chocolate around and on top.

Teddy Bears & Paws

Sadly I forgot take a proper photo of these. Their light chocolate sponge cakes filled and topped with chocolate cream cheese.

The Teddy Bears' are made out of chocolate crumble, chocolate button ears and the eyes, nose and mouths are made from chocolate dough.

The paws were made from shaped chocolate dough

Ube & Macapuno Cake

A favourite of many Filipinos during celebrations and commonly appear on the dessert table. Ube, also known as Purple Yam is a root vegetable and Macapuno is known in English as Sport Coconut ....strangely enough the Engrish translation on the jar is "Gelatinous Mutant" - how odd..... 







Layers of chiffon sponge cake made with real ube and macapuno. Covered with more cream cheese and ube crumble and decorated with piped cream cheese - yummmmoo!!!



Chocolate Windmill

A work in progress, I'll play around with the appearance later down the track.



I made this for a birthday. It's light chocolate mousse sandwiched between two chocolate sponge cake. Covered with whipped ganache and decorated with piped ganache and chocolate windmill triangles and some chocolate shavings.


It's all chocolate but not sickening at all - the sponge cake is light and not heavy like a mud cake...mmMMmmmMMMMmmm..

Blackforest Torte



This was one of my favourite cakes from when I first arrived in Australia - a good ol German Blackforest Cake.

Two layers of chocolate sponge cake filled with morello cherries soaked in kirsch liqueur and fresh cream whipped with a hint of white chocolate. Covered with more fresh cream and decorated with chocolate curls, glace cherries and drizzled with chocolate. nom nom nom.


The most tedious part of this cake were the chocolate curls around it - how painful, sticking each curl one by one, so in the end i just smashed them on the side =)
